On the southern tip of the Rwenzori Mountains, in western Uganda, close to the border with the Democratic Republic of the Congo, is a region known as Kiraro. Smallholder farmers in this heavily populated area work to provide food for their families. Farmers rely on their main cash crop, coffee, to generate the income necessary to cover educational expenses.
They maintain tight relationships with more than 200 local farmers, from whom they regularly purchase freshly picked cherries during the harvest season. The cherries are brought to Nyabirongo, where they undergo rigorous processing and supervision before being hulled and exported. To increase the quality and yield of the coffee farmed, we encourage farmers to follow GAP, or Good Agricultural Practices. Very old coffee trees frequently need to be “stumped” to encourage new, youthful growth that will increase yields.
The term “natural sundried,” also known as “natural process” or “dry process,” refers to the whole-fruit drying of coffee cherries without the use of water or mechanical devices to remove any of the fruit. The cherries are harvested, floated in water, then sorted to get rid of any underripe or overripe fruit before drying.
