Nestled in the cloud forests of Apía, Risaralda sits Finca La Esperanza; a family-run farm with Javier Heano overseeing production. Don Javier has devoted almost three decades to cultivating coffee here, combining years of farming experience with the constant desire to innovate and improve quality. He is a member of a community of producers committed to elevating the reputation of the area as one of Colombia’s most exciting regions for high-quality coffee production.

Bourbon is one of the oldest know cultivars of Arabica coffee, and is one of two varieties (the other being Typica) from which the majority of new cultivars have been bred. There are yellow & red types – the difference referring to the colour of the coffee cherry. It is generally believed that Yellow Bourbon tends to yield a fruiter cup profile, with a lighter body when compared to Red Bourbon.

Honey process coffees are produced by removing the skin of the coffee cherry, but leaving the fruit layer (mucilage) in contact with the seed while drying. When done well, this results in a sweet & silky cup with great balance; the best of both worlds between a clean & crisp washed coffee, and a fruity, boozy natural.
