This lot is from Finca El Betel – a family-run coffee farm located in Risaralda Department, Colombia. María Elena Pulgarín is the matriarch of her household, and has devoted her entire life to coffee farming. Her family’s coffee tradition dates back several generations – all the way to her great-great-grandmother. A decade ago in 2016, she began processing her own coffees on the family farm, El Betel, producing expressive and carefully crafted lots.

This lot is a mixture (or ‘field blend’) of Caturra, Castillo and Variedad Colombia cultivars – three varieties which are commonly cultivated throughout Colombia.

The coffee is carefully hand-picked and manually sorted before undergoing 168 hours of fermentation in sealed tanks. It is first sun-dried, then transferred to African-style raised beds, before being finished in mechanical dryers. After drying, the coffee is then stabilised in bags for three months to develop and lock in its flavour profile.
